Gingerbread Drop Cookies

Sibling (aka preteen/teenager) tested, super easy, holiday cookies! No cutting, no frosting… perfect for when you need to whip up something festive in a hurry. And they are paleo! These will become your go-to take-to-a-party cookies for the holidays!

Gingerbread Drop Cookies

Ingredients

  • 2 eggs
  • 2 cups almond meal, blanched
  • ½ cup tapioca starch
  • 1 tsp. Ginger
  • 1 tsp. Cloves
  • ½ tsp. Cinnamon
  • ½ tsp. Nutmeg
  • 1 tsp. Baking powder
  • ¼ tsp. salt
  • 2 tbsp. melted coconut oil
  • ½ cup honey
  • 1 tsp. Stevia powder
  • 2 tsp. Vanilla extract

 

Directions

  1. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. Beat the egg.
  3. Add the honey, coconut oil, stevia, and spices. Beat until thoroughly combined. 
  4. Add the almond flour and tapioca starch. Mix thoroughly.
  5. Add the baking powder. Mix thoroughly. 
  6. Place spoonfuls of the batter spaced 2 inches apart on the parchment paper. 
  7. Bake for 10-15 minutes, until slightly brown around the edges. Remove from the oven and let cool for 5 minutes. Enjoy!
