Paleo Avocado Tuna Toast

Sometimes I don’t want to cook in the mornings. I want to whip something up in five minutes, but I want it to be healthy and packed with protein. I’ve made this toast for breakfast several mornings over the past week, and it’s delicious – if you like tuna!

Let’s talk about the bread: Base Culture makes paleo breads and other baked goods. I find their bread in the health foods frozen section at Kroger, but you can also order it online. It’s a bit expensive, but it lasts longer than a regular loaf, since you will only use one to two pieces at a time due to the high calorie content. Also, you can’t beat the ingredients list!

Paleo Avocado Tuna Toast

  1. Pop a piece of the paleo bread in the toaster. While it’s toasting, mash the avocado, and open and drain a can of tuna.
  2. When the toast is finished, place it on a plate. Spread the avocado over the top, and dump the tuna on top of the avocado. Not all the tuna will fit on one piece of bread. You can make another piece, or just eat the leftover tuna on the side – like I do.
  3. Season with the sesame seeds, salt, pepper, and cayenne pepper. Eat with a fork. Enjoy!
